Ingredients
2 cups cooked shredded chicken
1 cup cottage cheese (full-fat recommended)
1/2 cup buffalo sauce
1/4 cup ranch dressing
1 cup shredded cheddar cheese
Optional: 2 tbsp Greek yogurt, green onions, blue cheese crumbles
Instructions
1. Blend cottage cheese in a food processor until smooth.
2. In a bowl, combine blended cottage cheese, buffalo sauce, ranch, and Greek yogurt (if using).
3. Stir in shredded chicken and 3/4 cup cheddar cheese.
4. Transfer to a baking dish, top with remaining cheese.
5. Bake at 375°F for 20–25 minutes until bubbly.
6. Garnish with green onions or blue cheese if desired.
7. Serve hot with your choice of dippers.
Notes
Blend cottage cheese well for best texture.
Store in fridge up to 4 days, or freeze in portions.
Reheat in oven or microwave with a stir halfway through.
