Ingredients
2 lbs bone-in chicken thighs or drumsticks
1.5 tsp coarse Himalayan pink salt
1 tbsp olive oil (optional for cooking)
1 tsp fresh rosemary (optional)
1 garlic clove, minced (optional)
Lemon wedges for serving
Instructions
1. Pat the chicken dry with paper towels.
2. Rub Himalayan pink salt evenly over all sides of chicken.
3. Place on a wire rack or plate and let rest 30 mins to overnight.
4. Preheat oven to 400°F or prep grill/skillet as preferred.
5. Cook chicken until internal temp reaches 165°F (about 35–40 mins roasting).
6. Let rest 5–10 minutes before serving.
Notes
You can prep this chicken up to 24 hours in advance for best results.
Avoid adding other salty ingredients before cooking.
Pairs well with rosemary, lemon, and light honey glazes.
