Description

Creamy one pot marry me chicken pasta made with sun-dried tomatoes, garlic, parmesan, and juicy chicken, all cooked in a single skillet.


Ingredients

2 chicken breasts (or thighs), cubed

1 tbsp olive oil

3 garlic cloves, minced

1/2 onion, diced

1/2 cup sun-dried tomatoes, chopped

2 cups chicken broth

1 cup heavy cream

2 cups uncooked penne pasta

3/4 cup grated parmesan

1 tsp Italian seasoning

Salt and black pepper to taste


Instructions

1. Season chicken with salt, pepper, and Italian seasoning.

2. Heat oil in a large pot and sear chicken until golden. Remove and set aside.

3. Sauté garlic, onion, and sun-dried tomatoes in the same pot.

4. Pour in chicken broth and heavy cream. Stir and bring to a simmer.

5. Add pasta and cook uncovered, stirring often.

6. Once pasta is tender, stir in cooked chicken and parmesan.

7. Simmer until sauce thickens. Let rest 5 minutes, then serve.

Notes

Add red pepper flakes for a spicy version.

Store leftovers in an airtight container up to 4 days.

Reheat with a splash of milk to revive creaminess.
