1 cup shredded carrots – for crunch and color

1 cup snow peas – trimmed

2 cloves garlic – minced

2 tablespoons low-sodium soy sauce – base for the stir-fry sauce

1 tablespoon oyster sauce – deepens the umami flavor

1 tablespoon hoisin sauce – slightly sweet finish

1 tablespoon cornstarch – mixed with 3 tablespoons water (slurry)

¼ teaspoon ground ginger – optional, adds warmth

2 green onions – chopped, for garnish

Sesame seeds – optional, for topping


Instructions

1. Cook the noodles according to package directions. Drain, rinse with cold water, and toss with sesame oil.

2. In a large skillet or wok, heat olive oil over medium-high heat. Add the chicken and cook for 4–5 minutes until golden and cooked through. Remove and set aside.

3. In the same skillet, add garlic, bell pepper, carrots, and snow peas. Stir-fry for 3–4 minutes until crisp-tender.

4. In a small bowl, mix soy sauce, hoisin sauce, oyster sauce, ginger, and cornstarch slurry. Stir to combine.

5. Return chicken to the pan, add noodles and sauce mixture. Toss everything together for 2–3 minutes until sauce thickens and coats all ingredients.

6. Top with green onions and sesame seeds before serving.

Notes

Use fresh vegetables for best texture and flavor.

Do not overcook the noodles; rinse with cold water immediately.
