Description
These air fryer chicken mozzarella roll-ups are crispy, cheesy, and ready in under 30 minutes. Perfect for a comforting dinner with a crunchy twist.
Ingredients
4 boneless, skinless chicken breasts (1.5 lbs), pounded thin
8 mozzarella cheese sticks (or 1½ cups shredded mozzarella)
1 cup Italian-style breadcrumbs
½ cup grated parmesan cheese
1 cup all-purpose flour
2 large eggs
1 tablespoon water
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Optional: fresh parsley for garnish, marinara for dipping
Instructions
1. Preheat air fryer to 375°F and pound chicken thin.
2. Place mozzarella on chicken, roll tightly, and secure with toothpicks.
3. Set up 3 bowls: flour, egg mixture, and breadcrumb mix.
4. Coat chicken in flour, dip in egg, then press into breadcrumb mix.
5. Brush with olive oil and air fry 12–15 minutes at 375°F, flipping once.
Notes
Freeze mozzarella for 10 minutes before using to avoid leaks.
Do not overcrowd the air fryer; cook in batches for even crisping.
Store leftovers in fridge for up to 3 days or freeze up to 2 months.
