Ingredients
2 cups cooked chicken breast, shredded or diced
2 ripe avocados, mashed
1/4 cup mayonnaise
2 tablespoons fresh lime juice
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/2 cup corn kernels
1/2 cup black beans, drained and rinsed
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Prepare cooked chicken by shredding or dicing into bite sized pieces
2. Mash avocados in a large bowl then mix with mayonnaise and lime juice until smooth
3. Add chicken, onion, cilantro, corn, and black beans and mix gently
4. Season with garlic powder, salt, and pepper and combine well
5. Chill for 20 minutes before serving for best texture and flavor
