Balsamic Glazed Chicken and Veggies is a quick and flavorful one pan dinner made with tender chicken, roasted vegetables, and a sweet tangy balsamic glaze. Perfect for weeknight meals and meal prep.
Ingredients
2 large chicken breasts sliced into strips
2 cups broccoli florets
1 red bell pepper sliced
1 zucchini sliced into rounds
1 cup cherry tomatoes
3 tablespoons balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
3 garlic cloves minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Slice chicken into even strips and chop vegetables into similar sizes
2. Mix balsamic vinegar honey olive oil garlic and Italian seasoning in a bowl to create the glaze
3. Add chicken and vegetables to a large bowl and toss with the glaze until fully coated
4. Spread everything on a sheet pan in a single layer
5. Bake at 400°F for 25 minutes stirring halfway through
6. Remove from oven let rest for a few minutes and serve warm

Use fresh vegetables for best flavor and texture
Do not overcrowd the pan to allow proper roasting
Adjust honey level depending on preferred sweetness
Store leftovers in fridge up to 4 days and reheat before serving
