Description
Juicy chicken breasts simmered with earthy mushrooms and a rich balsamic glaze make this easy one-pan dinner perfect for weeknights.
Ingredients
4 boneless, skinless chicken breasts (6 oz each)
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
2 teaspoons garlic powder
1 pound brown mushrooms, sliced
3 cloves garlic, minced
½ cup balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons honey
¼ cup low-sodium chicken broth
1 teaspoon dried thyme
Fresh parsley, chopped for garnish
Instructions
1. Pat chicken breasts dry and season both sides with salt, pepper, and garlic powder.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
3. Add mushrooms to the same pan. Cook for 5–6 minutes until browned, then add garlic and stir for 30 seconds.
4. Pour in balsamic vinegar, mustard, honey, and broth. Stir in thyme. Let simmer 5 minutes.
5. Return chicken to pan, spoon sauce over top. Cover and simmer 7–10 minutes until chicken is fully cooked.
6. Garnish with parsley and serve hot.
Notes
Use cremini or baby bella mushrooms for rich flavor.
Serve with mashed potatoes, roasted vegetables, or rice.
Store leftovers in an airtight container for up to 4 days.
To reheat, add a splash of broth and warm gently in a covered pan.
