Description
This bang bang chicken burrito bowl is a bold, healthy, and easy dinner packed with tender chicken, crisp vegetables, fluffy rice, and a creamy spicy-sweet sauce. Perfect for weeknights or meal prep.
Ingredients
2 pounds boneless skinless chicken breasts cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 cup mayonnaise dairy-free if preferred
1/4 cup Thai sweet chili sauce
1 tablespoon honey
1 tablespoon sriracha adjust to taste
4 cups cooked jasmine or white rice
2 cups shredded red cabbage
1 large carrot julienned
1 cucumber thinly sliced
1 large avocado sliced
1/4 cup fresh cilantro chopped
1 tablespoon sesame seeds
Instructions
1. In a small bowl mix mayonnaise Thai sweet chili sauce honey and sriracha until smooth. Set aside.
2. Toss chicken cubes with vegetable oil garlic powder smoked paprika salt and pepper.
3. Air fry at 400°F for 11 to 12 minutes flipping halfway or cook in a skillet for 8 to 10 minutes until golden and cooked through to 165°F.
4. Transfer cooked chicken to a clean bowl and toss with half of the prepared bang bang sauce.
5. Divide cooked rice into four serving bowls.
6. Top with cabbage carrot cucumber avocado and sauced chicken.
7. Drizzle remaining sauce over the bowls and garnish with cilantro and sesame seeds.
8. Serve immediately while warm or store components separately for meal prep.

Store chicken rice and vegetables separately in airtight containers for up to 4 days.
Reheat chicken and rice before assembling bowls for best texture.
Adjust sriracha for desired spice level.
