Description
Bang Bang Chicken Lettuce Wrap Bowl made with shredded chicken tossed in creamy sweet chili sauce, served over rice with crisp lettuce and fresh vegetables.
Ingredients
1 ½ pounds boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
½ cup mayonnaise
⅓ cup sweet chili sauce
1 tablespoon sriracha
1 tablespoon honey
1 teaspoon rice vinegar
2 cups cooked jasmine rice
8 butter lettuce leaves
1 cup shredded carrots
1 cup diced cucumber
¼ cup sliced green onions
1 tablespoon sesame seeds
Instructions
1. Season chicken with olive oil, garlic powder, paprika, salt, and pepper.
2. Cook chicken in skillet over medium heat 6 to 7 minutes per side until internal temperature reaches 165°F.
3. Let chicken rest 5 minutes, then shred with two forks.
4. Whisk mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl.
5. Toss shredded chicken with half the sauce.
6. Divide rice into bowls and top with sauced chicken, carrots, cucumber, and green onions.
7. Garnish with sesame seeds and serve with lettuce cups and remaining sauce.
Notes
Adjust sriracha for spice preference.
Store ingredients separately for meal prep.
Use rotisserie chicken for quicker preparation.
