1 pound ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh grated ginger

1/2 cup finely diced red bell pepper

1/2 cup finely shredded carrots

1/4 cup finely chopped green onions

1/4 cup low sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/4 teaspoon black pepper

12 large butter lettuce leaves, washed and dried

1 tablespoon chopped fresh cilantro


Instructions

1. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook for 6 to 8 minutes, breaking it apart as it browns.

2. Stir in minced garlic and grated ginger. Cook for 30 seconds until fragrant. Add diced bell pepper and shredded carrots. Cook for 3 to 4 minutes until slightly softened but still crisp.

3. In a small bowl, combine soy sauce, rice vinegar, hoisin sauce, sesame oil, and black pepper. Pour the sauce into the skillet and stir until the chicken is evenly coated. Simmer for 2 to 3 minutes until slightly thickened.

4. Remove from heat and stir in green onions and chopped cilantro.

5. Spoon the chicken mixture into butter lettuce leaves and serve immediately.

Notes

Use large butter lettuce leaves to prevent tearing.

Drain excess liquid from the skillet before assembling.

Store chicken filling separately from lettuce for best freshness.

Reheat filling in a skillet over medium heat for 3 to 4 minutes before serving.
