Ingredients
4 boneless skinless chicken breasts (6 to 7 ounces each)
1 cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
3 garlic cloves, minced
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat oven to 400 degrees Fahrenheit. Grease a baking dish lightly.
2. In a bowl, combine Parmesan cheese, mozzarella, minced garlic, Italian seasoning, paprika, salt, and black pepper. Mix well.
3. Pat chicken breasts dry with paper towels. Brush both sides lightly with olive oil.
4. Place chicken in the baking dish. Press the cheese mixture evenly over the top of each breast.
5. Bake uncovered for 25 to 30 minutes until the cheese is golden brown and internal temperature reaches 165 degrees Fahrenheit.
6. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
For even cooking, pound chicken breasts to an even thickness.
Use freshly grated Parmesan for best melt and flavor.
Do not overbake to prevent dryness.
Store leftovers in an airtight container for up to 4 days in the refrigerator.
