Ingredients
2 cups cooked chicken, shredded or chopped
1 ½ cups cooked white rice
2 cups broccoli florets, chopped small
1 can (10.5 oz) cream of chicken soup (or dairy-free alternative)
1 cup sour cream (or plain Greek yogurt or non-dairy alternative)
1 ½ cups shredded cheddar cheese (or dairy-free cheese)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika (optional)
¼ cup milk (dairy or plant-based)
½ cup breadcrumbs (optional)
1 tablespoon olive oil or melted butter for topping
Instructions
1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, sour cream, 1 cup shredded cheese, garlic powder, onion powder, salt, pepper, paprika, and milk. Mix until well combined.
3. Spread the mixture evenly into the prepared baking dish. Top with remaining ½ cup shredded cheese.
4. In a small bowl, stir together breadcrumbs and olive oil or melted butter. Sprinkle over casserole.
5. Bake uncovered for 25–30 minutes until golden and bubbly. Let rest for 5 minutes before serving.
Notes
You can prep this casserole a day ahead, assemble, cover, and refrigerate, then bake when ready.
To make it dairy-free, use plant-based cheese, yogurt, and soup.
Use rotisserie chicken to save time and add depth of flavor.
For a low-carb version, substitute cauliflower rice for white rice (reduce liquids slightly).
Letting the casserole rest after baking improves texture and makes slicing easier.
