Description
This Cheesy Chicken Rice Casserole Bake is creamy, comforting, and loaded with gooey cheddar cheese. It’s a simple one-dish dinner perfect for busy weeknights or make-ahead meals.
Ingredients
2 cups cooked chicken, shredded
1 ½ cups cooked white rice
1 can (10.5 oz) cream of chicken soup
¾ cup sour cream
1 cup milk (whole or 2%)
2 cups shredded cheddar cheese, divided
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
½ teaspoon salt
½ teaspoon dried thyme
½ teaspoon paprika (optional)
¼ cup chopped fresh parsley
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a large bowl, mix cream of chicken soup, sour cream, and milk. Add garlic powder, onion powder, black pepper, salt, thyme, and paprika. Stir until smooth.
3. Add cooked chicken, cooked rice, and 1½ cups of shredded cheddar. Mix until well combined.
4. Pour mixture into the baking dish. Top with remaining ½ cup of cheese. Cover with foil and bake for 20 minutes.
5. Uncover and bake an additional 10–15 minutes until bubbling and golden. Let rest for 5–10 minutes, garnish with parsley, and serve.
Notes
Use freshly shredded cheese for better melting.
You can substitute brown rice or add veggies like broccoli.
To freeze: assemble and wrap tightly before baking. Bake from thawed.
