This cheesy tater tot breakfast casserole is a hearty, crowd-pleasing dish packed with golden tater tots, savory sausage, bell peppers, and melty cheddar cheese, all baked together for the ultimate brunch comfort.
Ingredients
1 bag (32 oz) frozen tater tots
1 pound ground breakfast sausage
1 medium yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cups shredded cheddar cheese
8 large eggs
1 cup whole milk
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. Cook the sausage in a skillet over medium heat until browned; drain and set aside.
3. Sauté diced onion and bell peppers in the same pan for 3–4 minutes.
4. Whisk eggs, milk, garlic powder, salt, pepper, and smoked paprika in a large bowl.
5. Layer sausage, sautéed vegetables, and 1½ cups of cheese in the baking dish. Pour egg mixture on top.
6. Arrange frozen tater tots in a single layer over the casserole.
7. Bake uncovered for 40–45 minutes until golden and bubbly.
8. Sprinkle with remaining cheese and bake 5 more minutes.
9. Garnish with chopped parsley before serving.
