Ingredients
3 cups cooked chicken, shredded or cubed
2 cups cooked long-grain white rice
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 ½ cups shredded cheddar cheese, divided
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon black pepper
1 sleeve Ritz crackers (about 30), crushed
4 tablespoons unsalted butter, melted
Fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 350°F and grease a 9×13-inch casserole dish.
2. In a large bowl, combine cooked rice, chicken, cream of chicken soup, sour cream, 1 cup shredded cheddar, garlic powder, onion powder, and black pepper. Mix well.
3. Spread the mixture into the prepared baking dish and smooth the top.
4. In a separate bowl, stir crushed Ritz crackers with melted butter until evenly coated.
5. Sprinkle the cracker topping evenly over the casserole and top with remaining ½ cup cheddar cheese.
6. Bake uncovered for 25–30 minutes or until hot and bubbly with a golden top.
7. Let rest for 5–10 minutes before serving. Garnish with fresh parsley if desired.
Notes
Make sure your rice and chicken are fully cooked and cooled before assembling to avoid excess moisture.
For extra richness, use sharp cheddar cheese.
