Description
This chicken noodle soup crock pot recipe is filled with tender chicken, fresh vegetables, savory broth, and egg noodles. A comforting and healthy slow cooker meal.
Ingredients
2 large boneless, skinless chicken breasts
3 carrots, sliced
3 celery stalks, chopped
1 yellow onion, diced
3 garlic cloves, minced
8 cups chicken broth
2 cups wide egg noodles
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf (optional)
Salt and pepper to taste
Fresh parsley or lemon for garnish (optional)
Instructions
1. Add chicken, vegetables, garlic, broth, and seasonings to the crock pot. Stir.
2. Cook on low 6–7 hours or high 3–4 hours, until chicken is tender.
3. Remove chicken, shred with two forks, return to pot.
4. Add egg noodles and cook on high for 15–20 minutes until tender.
5. Adjust salt and pepper to taste. Serve with parsley or lemon.
Notes
Add spinach or peas at the end for extra greens.
Use rotisserie chicken to save time.
Store noodles separately to avoid mushiness if prepping ahead.
