Ingredients
2 cups cooked and sliced chicken breast
12 oz pasta (penne or fettuccine)
2 tablespoons olive oil
3 garlic cloves minced
1 cup sliced zucchini
1 cup sliced bell peppers
1 cup broccoli florets
1 cup thinly sliced carrots
1 cup chopped asparagus
1 cup heavy cream
2 tablespoons fresh lemon juice
1 cup grated Parmesan cheese
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and reserve a small amount of pasta water
2. Heat olive oil in a pan and cook the sliced chicken until golden and fully cooked. Remove and set aside
3. In the same pan, add garlic and all vegetables. Cook until slightly tender but still crisp
4. Pour in heavy cream, lemon juice, and Parmesan cheese. Stir until the sauce becomes smooth and slightly thick
5. Add pasta and chicken back into the pan. Toss everything together until well coated. Adjust seasoning and serve warm
