Ingredients
2 boneless skinless chicken breasts thinly sliced
8 oz spaghetti or linguine
3 tablespoons olive oil
3 tablespoons unsalted butter
3 garlic cloves minced
1 cup chicken broth
1/3 cup fresh lemon juice
2 tablespoons capers drained
1/2 cup heavy cream optional
1/2 cup grated parmesan cheese
Salt to taste
Black pepper to taste
2 tablespoons fresh parsley chopped
Instructions
1. Bring a large pot of salted water to a boil then cook the pasta until al dente drain and set aside
2. Heat olive oil in a large skillet over medium heat then cook the chicken slices until golden and fully cooked remove and set aside
3. In the same skillet melt butter then add garlic stir briefly then pour in chicken broth lemon juice and capers and let the sauce simmer gently
4. Return the chicken to the skillet add cooked pasta toss everything together then stir in cream if using and finish with parmesan and parsley
Notes
Slice the chicken evenly so it cooks quickly and stays tender this small step improves texture
Use fresh lemon juice instead of bottled for a cleaner brighter flavor you will notice the difference right away
Do not overcook the pasta because it will continue cooking slightly when mixed with the hot sauce
Add a splash of broth when reheating to keep the sauce smooth and prevent dryness
