Ingredients
3 cups cooked shredded chicken
4 large ripe avocados, halved and pitted
1 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1 cup finely diced celery
1/3 cup finely diced red onion
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. In a large bowl combine shredded chicken, Greek yogurt, mayonnaise, lemon juice, salt, and black pepper. Stir until evenly mixed.
2. Fold in diced celery, red onion, and chopped parsley. Mix gently to maintain texture.
3. Slice avocados in half and remove pits. Scoop a small amount of flesh if needed to create space for filling.
4. Spoon the chicken salad mixture evenly into each avocado half.
5. Garnish with extra parsley or black pepper if desired.
