Description

This Chicken Scampi With Garlic Parmesan Rice is a rich, one-skillet meal made with tender chicken, buttery garlic, and cheesy rice. It’s fast, flavorful, and perfect for busy nights.


Ingredients

1 pound chicken breast or tenders, sliced thin

Salt and black pepper, to taste

1/2 teaspoon garlic powder

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

4 garlic cloves, minced

1/4 teaspoon red pepper flakes

1 tablespoon fresh lemon juice

1 1/2 cups long-grain white rice, uncooked

3 cups chicken broth

1/2 cup freshly grated parmesan cheese

Optional: sautéed mushrooms, parsley, lemon wedges for garnish


Instructions

1. Season sliced chicken with salt, pepper, and garlic powder.

2. Heat olive oil in a large skillet over medium-high. Sear chicken 3–4 minutes per side until golden. Remove and set aside.

3. Reduce heat to medium. Add 2 tablespoons butter. Sauté garlic and red pepper flakes 1–2 minutes until fragrant.

4. Add lemon juice and stir to deglaze the pan.

5. Add rice and toast for 2–3 minutes. Pour in broth, bring to a boil. Cover and simmer 18–20 minutes until rice is tender.

6. Stir in remaining butter and parmesan. Return chicken to pan and cover for 5 minutes off heat.

7. Garnish with parsley, sautéed mushrooms, or lemon. Serve hot.

Notes

Use long-grain rice for best texture.

Freshly grated parmesan melts better and gives richer flavor.

To make it spicy, double the red pepper flakes or add Cajun seasoning to the chicken.

Serve with garlic bread or a green salad for a complete meal.
