Ingredients

2 large boneless skinless chicken breasts about pounds

2 tablespoons chipotle peppers in adobo finely chopped

1 tablespoon adobo sauce

3 tablespoons fresh lime juice about 2 limes

1 teaspoon lime zest

3 tablespoons olive oil

3 garlic cloves minced

1 tablespoon honey

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

6 cups romaine lettuce chopped

2 cups mixed greens

2 ears corn grilled and kernels removed about 1 cup

1 cup cherry tomatoes halved

¼ cup red onion thinly sliced

1 large avocado diced

¼ cup fresh cilantro chopped


Instructions

1. In a bowl, whisk together chopped chipotle peppers, adobo sauce, lime juice, lime zest, olive oil, garlic, honey, cumin, salt, and pepper until smooth.

2. Place chicken breasts in a shallow dish and coat thoroughly with the marinade. Cover and refrigerate for 30 minutes to 2 hours.

3. Preheat grill to medium high about 400°F and lightly oil the grates.

4. Grill chicken for 5 to 7 minutes per side until internal temperature reaches 165°F. Remove and let rest for 5 minutes before slicing.

5. Grill corn for about 8 minutes, turning occasionally until lightly charred. Remove kernels once cooled.

6. In a large bowl combine romaine, mixed greens, grilled corn, cherry tomatoes, red onion, and avocado. Top with sliced chipotle chicken and sprinkle with cilantro before serving.

Notes

Do not marinate longer than 2 hours to prevent overpowering lime flavor.

Always rest the chicken before slicing to keep it juicy.

Store chicken separately from greens for meal prep.

Adjust spice level by increasing or decreasing chipotle peppers.
