Ingredients
2 cups cooked chicken breast, shredded or diced
1 cup romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup corn kernels
1 cup black beans, rinsed and drained
1 red bell pepper, diced
1 avocado, diced
1/4 cup red onion, finely chopped
1 cup shredded cheddar cheese
1/2 cup tortilla strips
1/2 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon chipotle sauce
1 tablespoon ranch seasoning
1 tablespoon lime juice
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Chop lettuce and vegetables into even pieces and prepare cooked chicken
2. Mix mayonnaise, Greek yogurt, chipotle sauce, ranch seasoning, lime juice, garlic powder, salt, and pepper until smooth
3. Combine chicken, vegetables, beans, and cheese in a large bowl
4. Pour dressing over the salad and toss gently until evenly coated
5. Add tortilla strips on top just before serving for crunch
