Description
This crack chicken penne is a creamy, cheesy, ranch-flavored pasta dish made with simple ingredients and loaded with satisfying flavor. Perfect for weeknight dinners and meal prep.
Ingredients
12 oz penne pasta
2 cups cooked shredded chicken
8 oz cream cheese, softened
1 oz packet ranch seasoning mix
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1/2 tsp garlic powder
1/4 tsp black pepper
1 tbsp olive oil
2 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the penne pasta until al dente, about 9 minutes. Drain and set aside.
2. In a large skillet over medium heat, add olive oil, then stir in cream cheese and chicken broth. Whisk until smooth.
3. Add the cream of chicken soup, ranch seasoning, garlic powder, and black pepper. Stir to combine.
4. Add shredded chicken to the sauce and let simmer for 3–5 minutes.
5. Fold in cooked penne, cheddar, and mozzarella. Stir until melted and creamy. Garnish with parsley and serve.
Notes
Use freshly shredded cheese for best melting results.
If the sauce is too thick, stir in extra chicken broth or milk.
