Ingredients

3 cups cooked chicken breast, shredded or diced

3 cups cooked white rice (long grain or jasmine)

8 ounces cream cheese, softened and cubed

1 ¼ cups condensed cream of mushroom soup

½ cup unsalted butter, softened and cubed

3 cloves garlic, minced

1 cup chicken broth

0.7 ounces dry Italian dressing mix (1 packet)

2 ½ cups shredded Colby Jack cheese, divided

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1. Preheat your oven to 350°F. Lightly grease a 9×13 inch baking dish with nonstick spray.

2. In a small bowl, whisk together the softened cream cheese and butter until smooth.

3. In a large bowl, combine cooked chicken, rice, garlic, cream of mushroom soup, dry Italian dressing mix, chicken broth, salt, pepper, and half the shredded cheese. Stir in the cream cheese mixture until fully incorporated.

4. Pour mixture into prepared baking dish and spread evenly. Top with the remaining cheese.

5. Cover dish with foil sprayed with nonstick spray. Bake for 25 minutes, removing foil halfway through. Bake until cheese is melted and edges are bubbly.

6. Let casserole rest for 5 minutes before serving. Garnish with parsley.

Notes

For best texture, use full-fat cream cheese.

You can substitute cream of chicken or cream of celery soup for the mushroom soup.

Add steamed broccoli or frozen peas before baking for more vegetables.
