Creamy, comforting, and quick, this cream cheese chicken casserole with spinach is a weeknight winner packed with flavor, protein, and greens.
Ingredients
3 cups cooked chicken breast, shredded or cubed
8 ounces cream cheese, softened
8 ounces penne pasta, cooked al dente
2 cups fresh spinach, roughly chopped
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 cloves garlic, minced
1/2 yellow onion, finely chopped
1 tablespoon olive oil
3/4 cup low-sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a large skillet, heat olive oil over medium heat. Sauté onion for 2–3 minutes, then add garlic and cook another minute.
3. Add chopped spinach and cook until wilted. Stir in cream cheese and chicken broth until smooth.
4. Fold in shredded chicken and cooked pasta. Season with salt and pepper.
5. Transfer to baking dish. Top with mozzarella and parmesan.
6. Bake uncovered for 15–20 minutes until bubbly and golden.
Notes
Use freshly shredded cheese for best melting results.
Do not overcook pasta before baking to avoid sogginess.
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat with a splash of broth to restore creaminess.
Add a pinch of red pepper flakes for a bit of heat.
