Ingredients
3 cups cooked chicken breast, diced or shredded
2 large ripe avocados, diced
1 1/2 cups cherry tomatoes, halved
2 cups romaine lettuce, chopped
1/4 cup red onion, finely diced
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/2 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. In a medium bowl, whisk together Greek yogurt, mayonnaise, lemon juice, olive oil, garlic powder, salt, and black pepper until smooth.
2. In a large mixing bowl, combine diced chicken, cherry tomatoes, chopped romaine, and red onion.
3. Gently fold in the diced avocados to keep their shape intact.
4. Pour the dressing over the salad and stir carefully until evenly coated.
5. Sprinkle chopped parsley on top, taste, and adjust seasoning if needed. Serve immediately or chill briefly before serving.
Notes
For meal prep, store dressing separately and mix before serving.
Add avocado just before serving to reduce browning.
