Description
This creamy chicken noodle soup is rich, hearty, and perfect for a cozy night in. Made with shredded chicken, soft egg noodles, and a silky broth.
Ingredients
2 cups cooked shredded chicken
1 tablespoon unsalted butter
1 small onion, diced
2 carrots, sliced
2 celery stalks, sliced
2 garlic cloves, minced
2 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1 can (10.5 oz) cream of chicken soup
1 cup milk (or 2% milk)
2 cups egg noodles
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
1. In a large pot, melt butter and sauté onions, carrots, and celery for 5-7 minutes.
2. Add garlic and cook for 30 seconds. Stir in flour to make a roux, cooking for 1 minute.
3. Gradually whisk in chicken broth and cream of chicken soup. Simmer for 5 minutes.
4. Add shredded chicken, egg noodles, thyme, salt, and pepper. Cook until noodles are tender.
5. Reduce heat and stir in milk. Simmer for 2-3 minutes. Garnish with parsley and serve.
Notes
To make this soup freezer-friendly, cook the noodles separately and add them fresh when reheating.
Use rotisserie chicken to save time and boost flavor.
For extra thickness, mash a few vegetables into the broth before serving.
