Description
Creamy Dill Chicken Salad combines tender chicken with a creamy dressing and fresh dill for a refreshing and satisfying meal. The smooth dressing coats the chicken while dill adds a bright herbal flavor. This quick recipe mixes together in one bowl and works well for lunches, light dinners, or meal prep. The creamy texture and fresh herb taste create a balanced chicken salad that can be served with lettuce, wraps, or toasted bread.
Ingredients
2 cups cooked chicken breast, diced or shredded
1/3 cup plain Greek yogurt
2 tablespoons olive oil
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1/4 cup finely diced celery
1/4 cup finely diced red onion
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a medium mixing bowl combine Greek yogurt, olive oil, and lemon juice. Stir until the dressing becomes smooth.
2. Add diced or shredded chicken to the bowl and mix gently so the dressing coats the chicken evenly.
3. Stir in diced celery and red onion to add texture and flavor.
4. Add chopped dill and parsley and mix until the herbs distribute evenly through the salad.
5. Season with salt and black pepper then taste and adjust seasoning if needed.
6. Serve immediately or refrigerate for about 20 minutes before serving so the flavors blend.
Notes
Use fresh dill for the best flavor and aroma.
Cooked chicken breast works well, but shredded chicken can also be used.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Stir the salad before serving if it has been chilled.
