Description
One-skillet creamy garlic chicken and spinach dinner made with juicy seared chicken, parmesan, cream, and fresh spinach.
Ingredients
2 boneless skinless chicken breasts, halved
1 tablespoon olive oil
2 tablespoons unsalted butter
4 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
1/3 cup grated parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups fresh baby spinach
Instructions
1. Slice chicken in half to create cutlets. Season with salt, pepper, and Italian seasoning.
2. Heat olive oil in skillet over medium-high. Sear chicken 4–5 minutes per side until golden and cooked through. Remove from pan.
3. Reduce heat to medium. Melt butter. Sauté garlic 30–45 seconds until fragrant.
4. Add chicken broth, scraping brown bits. Simmer 2–3 minutes.
5. Reduce heat. Stir in cream, parmesan, and seasoning. Simmer 3–4 minutes.
6. Stir in spinach until wilted. Return chicken and spoon sauce over top.
7. Simmer 2 minutes. Remove from heat and serve hot.
Notes
Use freshly grated parmesan for best texture.
Do not boil cream sauce after adding dairy.
Pairs well with mashed potatoes, rice, or buttered noodles.
