Description

This creamy chicken noodle soup is rich, hearty, and loaded with tender chicken, egg noodles, vegetables, and a savory creamy broth. The perfect comfort food for cozy nights and easy weeknight dinners.


Ingredients

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium yellow onion, diced

3 garlic cloves, minced

2 medium carrots, peeled and sliced

2 celery stalks, sliced

1.5 pounds boneless skinless chicken thighs, cut into chunks

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 bay leaf

1 teaspoon salt, or to taste

½ teaspoon ground black pepper

¼ cup all-purpose flour

1½ cups heavy cream

3 cups uncooked wide egg noodles

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil and butter in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5–6 minutes.

2. Add chicken thighs, season with salt and pepper. Cook until lightly browned, about 7 minutes.

3. Sprinkle in the flour and stir until vegetables and chicken are coated. Slowly pour in chicken broth while stirring.

4. Add thyme and bay leaf. Bring to a simmer and cook uncovered for 15 minutes until chicken is cooked through and broth thickens slightly.

5. Stir in heavy cream and egg noodles. Cook another 8–10 minutes, or until noodles are tender. Remove bay leaf. Adjust seasoning and stir in parsley before serving.

Notes

For storage, keep the soup in the fridge for up to 4 days or freeze before adding noodles.

To reheat, warm gently on the stovetop and add a splash of broth to adjust consistency.

Noodles can be cooked separately and added per serving if preparing in advance.
