Ingredients
1½ lbs boneless skinless chicken thighs
1 tbsp olive oil
1 tbsp unsalted butter
6 garlic cloves, minced
1 tsp onion powder
½ tsp dried thyme
½ tsp paprika
Salt and pepper to taste
1 cup chicken broth
¾ cup heavy cream
½ cup parmesan cheese
2 cups cooked jasmine rice
1 cup baby spinach
2 tbsp parsley
Instructions
1. Heat oil and butter, cook chicken until browned.
2. Add garlic and cook briefly.
3. Deglaze with broth, simmer.
4. Add cream and cheese, let thicken.
5. Stir in rice and spinach, combine.
Notes
Warm rice before adding to avoid cooling the sauce.
Use fresh parmesan for best texture.
Garnish with fresh herbs before serving.
