Creamy Garlic Chicken with Sun-Dried Tomatoes is a quick, one-skillet dinner with tender chicken, garlic cream sauce, and tangy sun-dried tomatoes.


Ingredients

1.5 pounds boneless skinless chicken breasts or thighs

1 teaspoon kosher salt

½ teaspoon black pepper

1 tablespoon olive oil

3 tablespoons unsalted butter

6 garlic cloves, minced

¾ cup sun-dried tomatoes, chopped

1 cup chicken broth

1½ cups heavy cream

¾ cup freshly grated parmesan cheese

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

2 tablespoons fresh parsley, chopped


Instructions

1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat and sear chicken on both sides until golden brown. Remove and set aside.

2. Reduce heat. Add butter and minced garlic to the skillet and sauté for 30 seconds until fragrant.

3. Add sun-dried tomatoes and pour in chicken broth to deglaze the pan. Scrape up any browned bits.

4. Stir in heavy cream, parmesan, and seasoning. Simmer for 4–5 minutes until thickened.

5. Return chicken to skillet, coat with sauce, and simmer for 5 more minutes. Garnish with parsley and serve.

Notes

For dairy-free: use full-fat coconut milk and skip the cheese.

Best served with pasta, mashed potatoes, or rice.

Store leftovers in the fridge for up to 4 days.
