Ingredients
6 boneless skinless chicken thighs (about 1.5 to 2 pounds)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon unsalted butter
6 garlic cloves, minced
1 1/4 cups heavy cream
1/2 cup low-sodium chicken broth
3/4 cup freshly grated parmesan cheese
1 tablespoon cornstarch mixed with 1 tablespoon water (optional)
2 tablespoons chopped fresh parsley
Instructions
1. Pat chicken thighs dry and season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove and set aside.
3. Reduce heat to medium. Add butter and minced garlic to the skillet and sauté for 30 to 60 seconds until fragrant.
4. Pour in chicken broth and scrape up browned bits from the pan. Stir in heavy cream and bring to a gentle simmer.
5. Whisk in grated parmesan cheese until fully melted and smooth.
6. If desired, stir in cornstarch slurry and simmer until the sauce thickens.
7. Return chicken to the skillet and spoon sauce over the top. Simmer for 2 to 3 minutes.
8. Garnish with fresh parsley and serve hot.
Notes
Use freshly grated parmesan for the smoothest sauce.
Do not boil the sauce after adding cream and cheese to prevent separation.
Add a splash of broth or cream when reheating to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
