Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
2 tablespoons olive oil
5 garlic cloves, minced
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 cup low-sodium chicken broth
1 cup heavy cream
1 teaspoon fresh thyme leaves
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional: 1/4 teaspoon red pepper flakes
Instructions
1. Pat the chicken dry and season with salt and pepper.
2. Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side. Remove and set aside.
3. Add garlic to the pan and cook for 30 seconds.
4. Deglaze with chicken broth, lemon juice, and zest. Scrape up any brown bits.
5. Add cream and thyme. Simmer gently for 4–5 minutes until slightly thickened.
