Description
This Creamy Parmesan Chicken and Rice One Pot is a quick, satisfying dinner made with tender chicken, savory parmesan, and creamy rice, all cooked in one pan.
Ingredients
1.5 pounds boneless, skinless chicken thighs, cut into chunks
1 cup long grain white rice, rinsed
3 tablespoons olive oil
1 small yellow onion, finely chopped
3 garlic cloves, minced
2.5 cups low-sodium chicken broth
1 cup whole milk
1 cup grated parmesan cheese
1/2 cup heavy cream
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and black pepper, to taste
1 tablespoon chopped fresh parsley (optional, for garnish)
1 cup frozen peas or chopped baby spinach (optional)
Instructions
1. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Season chicken with salt, pepper, garlic powder, and paprika. Sear 3–4 minutes per side until lightly browned. Remove and set aside.
2. In the same pan, sauté onion for 4 minutes until soft. Add garlic and cook 30 seconds.
3. Add rinsed rice and toast 1 minute. Pour in broth and milk. Stir in Italian seasoning, onion powder, salt, and pepper. Bring to a simmer.
4. Return chicken to the pot. Cover and reduce heat to low. Simmer for 18–20 minutes until rice is tender and most liquid is absorbed.
5. Stir in heavy cream and parmesan. Cook 2–3 minutes until creamy. Add peas or spinach if using. Adjust seasoning and garnish with parsley. Serve hot.
Notes
Use freshly grated parmesan for the best texture and flavor.
Don’t lift the lid while the rice is cooking—steam is key to even cooking.
Add a splash of broth or milk when reheating leftovers to bring back the creaminess.
