1 cup orzo pasta

1 bunch fresh asparagus, trimmed and cut into small pieces

3 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons butter

2 cups chicken broth

1 cup milk or light cream

3/4 cup grated parmesan cheese

1/2 teaspoon salt, adjust to taste

1/2 teaspoon black pepper

1/2 teaspoon Italian seasoning

fresh parsley, chopped for garnish


Instructions

1. Heat olive oil and butter in a large skillet over medium heat. Add the diced chicken and cook until lightly golden and heated through, then remove and set aside.

2. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant. Stir in the orzo and toast it lightly for added flavor.

3. Pour in the chicken broth and bring to a gentle simmer. Cook the orzo, stirring occasionally, until tender and most of the liquid is absorbed.

4. Add the chopped asparagus and cook for a few minutes until tender but still slightly crisp.

5. Stir in the milk and grated parmesan cheese. Return the chicken to the skillet and mix until everything becomes creamy and well combined. Adjust seasoning if needed.

Notes

Add a splash of broth or milk when reheating to restore the creamy texture.

Do not overcook the asparagus to keep its bright color and slight crunch.
