Creamy Salsa Chicken Salad combines tender chicken with a creamy dressing and zesty salsa for a fresh, satisfying meal.
Ingredients
2 cups cooked chicken breast, shredded or diced
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup salsa
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/2 cup corn kernels
1/2 cup black beans, drained and rinsed
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lime juice
Instructions
1. Prepare cooked chicken by shredding or dicing into bite sized pieces
2. In a large bowl mix mayonnaise and sour cream until smooth then stir in salsa
3. Add chicken, onion, cilantro, corn, and black beans and mix gently
4. Season with garlic powder, salt, and pepper then combine well
5. Add lime juice and mix again then chill for at least 20 minutes before serving
Notes
Chill before serving for better flavor
Use thick salsa for a creamier texture
