CrockPot Italian Chicken Tortellini Bake

Description

A rich and creamy slow cooker pasta dinner made with tender chicken, cheese tortellini, and Italian spices, perfect for busy weeknights or cozy weekends.


Ingredients

2 boneless, skinless chicken breasts (about 1.5 lbs)

20 oz refrigerated cheese tortellini

1 can (14.5 oz) Italian-style diced tomatoes, undrained

1 package (8 oz) cream cheese, cubed

1 cup shredded mozzarella cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

2 cups baby spinach (optional)

2 tbsp chopped fresh basil (for garnish)


Instructions

1. Spray CrockPot and place chicken in bottom with tomatoes and spices.

2. Cover and cook on low for 4–5 hours until chicken is cooked.

3. Shred chicken, return to pot, stir.

4. Add cream cheese and spinach, stir and melt.

5. Add tortellini and cook 30–45 mins. Top with mozzarella and basil.

Notes

Use refrigerated tortellini to avoid soggy pasta.

Add tortellini near the end to preserve texture.

Garnish with fresh basil and serve with garlic bread.
