Description
A quick and cozy creamy chicken noodle soup packed with tender chicken, soft vegetables, and a silky broth. Perfect for busy nights and chilly days.
Ingredients
2 tablespoons unsalted butter
1 medium yellow onion, diced
2 carrots, peeled and sliced
2 celery stalks, chopped
3 garlic cloves, minced
1/4 cup all-purpose flour
6 cups low-sodium chicken broth
3 cups cooked shredded chicken
2 cups egg noodles (wide or homestyle)
1 cup heavy cream
1 teaspoon dried thyme or Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon fresh parsley, chopped
Instructions
1. In a large soup pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
2. Add garlic and stir for 30 seconds. Sprinkle in flour and stir constantly for 1–2 minutes to create a roux.
3. Gradually add the chicken broth while stirring. Bring to a simmer and add thyme, salt, and pepper.
4. Add shredded chicken and egg noodles. Cook for 8–10 minutes until noodles are just tender.
5. Reduce heat to low and stir in the heavy cream. Warm through for 2–3 minutes. Taste and adjust seasoning, then garnish with parsley and serve hot.
Notes
For freezing, omit noodles and add them fresh when reheating.
Use rotisserie chicken to save prep time.
Stir in cream off heat to prevent curdling.
