Description
This Easy Crockpot Chicken Noodle Soup is the perfect cozy meal. Made with tender chicken, egg noodles, and hearty vegetables, it simmers all day in the slow cooker for rich flavor and simple prep.
Ingredients
2 large boneless, skinless chicken breasts
3 carrots, peeled and sliced
3 celery stalks, chopped
1 medium yellow onion, diced
3 garlic cloves, minced
8 cups low-sodium chicken broth
2 cups wide egg noodles
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf (optional)
Salt and pepper, to taste
Fresh parsley or lemon wedges, for garnish (optional)
Instructions
1. Place chicken, carrots, celery, onion, garlic, broth, thyme, parsley, bay leaf, salt, and pepper in crockpot. Stir to combine.
2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through.
3. Remove chicken and shred with two forks. Return it to the crockpot.
4. Add egg noodles. Cook on high for 15–20 minutes until noodles are tender.
5. Remove bay leaf, adjust salt and pepper, and garnish with parsley or lemon if desired.
Notes
Store leftovers in the fridge up to 4 days.
Freeze soup base (without noodles) for 3 months.
Use gluten-free pasta or chicken thighs for variation.
Add greens like spinach or peas at the end for extra nutrients.
