Description
Quick, flavorful, and better than takeout, this easy garlic chicken fried rice is the perfect 30-minute meal for busy weeknights or leftovers.
Ingredients
2 tablespoons vegetable oil
1 pound chicken breast, cubed
4 garlic cloves, minced
2 eggs, lightly beaten
2 cups cold, cooked white rice
1/2 cup frozen peas and carrots, thawed
3 green onions, sliced (white and green parts separated)
3 tablespoons low-sodium soy sauce (or tamari for gluten-free)
1 tablespoon sesame oil
Salt and pepper to taste
Instructions
1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add chicken, season with salt and pepper, and sear for 6–7 minutes until cooked through. Remove from pan and set aside.
2. Add a bit more oil. Pour in the eggs and scramble until just set. Push to the side of the pan.
3. Add minced garlic and white parts of green onions. Stir-fry for 30 seconds, then add peas and carrots. Cook for 1–2 minutes.
4. Add cold rice and break up any clumps. Stir well and let cook undisturbed for 1–2 minutes.
5. Pour in soy sauce and sesame oil. Stir everything well. Return chicken and eggs to the pan. Stir to combine and top with green onions.
Notes
Use day-old rice for best results. For a spicier kick, drizzle with chili oil or sriracha before serving. Swap chicken with shrimp or tofu for variations.
