This easy weeknight chicken breast dinner is juicy, quick, and full of flavor. Ready in under 30 minutes, it’s perfect for busy evenings with just a few ingredients.
Ingredients
4 boneless, skinless chicken breasts (6–8 oz each)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon black pepper
¼ teaspoon onion powder (optional)
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
Instructions
1. Place each chicken breast between parchment or plastic and pound to even thickness.
2. Mix garlic powder, smoked paprika, salt, pepper, and onion powder in a small bowl. Season both sides of each chicken breast.
3. Heat olive oil in a skillet over medium-high heat. When hot, add the chicken and cook for 5–6 minutes per side until golden and cooked through.
4. Remove chicken from pan and let rest for 5 minutes.
5. Drizzle with lemon juice and sprinkle with chopped parsley before serving.
Notes
Use a thermometer to ensure the chicken reaches 165°F for perfect doneness.
