Ingredients
2 cups cooked chicken breast, shredded or diced
1 cup sweet corn kernels
1 cup black beans, rinsed and drained
1 cup cherry tomatoes, halved
1 red bell pepper, diced
1 avocado, diced
1/4 cup red onion, finely chopped
1/3 cup fresh cilantro, chopped
1 cup shredded cheddar cheese
1/2 cup tortilla strips
1/2 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Chop all vegetables into bite sized pieces and prepare cooked chicken
2. Mix mayonnaise, Greek yogurt, lime juice, chili powder, garlic powder, salt, and pepper in a bowl until smooth
3. Combine chicken, vegetables, beans, and cheese in a large bowl
4. Pour dressing over the mixture and toss gently until evenly coated
5. Add tortilla strips on top just before serving for crunch
