A creamy, quick, and flavorful garlic butter chicken and spinach pasta recipe perfect for family dinners or cozy nights in.
Ingredients
2 tablespoons unsalted butter
1 tablespoon olive oil
4 cloves garlic, minced
1 pound boneless, skinless chicken breast, cubed
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
3 cups baby spinach
1 cup heavy cream
¾ cup grated parmesan cheese
12 ounces penne pasta
½ cup reserved pasta water
Optional: ¼ teaspoon red pepper flakes
Instructions
1. Boil pasta in salted water, reserve ½ cup water, drain, and set aside.
2. Heat butter and olive oil in skillet. Cook chicken with seasoning until golden and cooked through. Remove from pan.
3. Add garlic and sauté for 30 seconds. Add cream and simmer for 2 minutes.
4. Add parmesan, stir until melted. Add spinach and cook until wilted.
5. Return chicken and add pasta. Stir in reserved pasta water as needed. Serve warm.
Notes
Use fresh garlic and real parmesan for best flavor.
Don’t overcook the spinach or it will lose texture.
Great for meal prep. Store leftovers in fridge up to 3 days.
