Ingredients

1 ½ pounds boneless skinless chicken thighs, diced

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon chili powder

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Zest of 1 lime

1 ½ cups long grain white rice

3 cups water or chicken broth

½ teaspoon salt

1 tablespoon lime juice

1 tablespoon chopped cilantro (optional)

2 cups frozen or fresh corn

⅓ cup mayonnaise

2 tablespoons sour cream

½ teaspoon garlic powder

Juice of ½ lime

¼ teaspoon chili powder

⅓ cup crumbled cotija or feta cheese

1 tablespoon chopped cilantro

Optional toppings: diced avocado, jalapeños, hot sauce, extra lime wedges


Instructions

1. Rinse rice and cook with water or broth and salt for 18 minutes.

2. Let rice rest, fluff with fork, and stir in lime juice and cilantro.

3. Char corn in hot dry skillet for 5–6 minutes until golden.

4. Mix charred corn with mayo, sour cream, garlic powder, lime juice, chili powder, cotija, and cilantro.

5. Season chicken with olive oil, garlic, onion, paprika, cumin, chili powder, salt, pepper, lime juice, and zest.

6. Cook chicken in skillet over medium-high heat for 6–8 minutes until browned and cooked through.

7. Assemble bowls with rice, chicken, corn topping, and garnishes.

Notes

Store rice, chicken, and corn separately to keep texture fresh.

Only add avocado and cilantro right before serving.

Reheat with a splash of broth or water to prevent drying.
