A quick and filling breakfast sandwich made with juicy grilled chicken tenders, creamy avocado, and melted cheese between crispy toasted bread.
Ingredients
2 boneless skinless chicken tenders (approx. 6 oz)
1 ripe avocado
4 slices sourdough or ciabatta bread
4 slices provolone or mozzarella cheese
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and black pepper to taste
1 teaspoon lemon juice
Optional: sliced tomato, baby spinach, red onion
Instructions
1. Season chicken with garlic powder, salt, and pepper. Grill or pan-sear for 3 to 4 minutes per side.
2. Mash avocado with lemon juice and a pinch of salt.
3. Spread avocado on 2 slices of bread. Top with grilled chicken, 2 slices of cheese, and optional add-ins. Close with remaining bread.
4. Brush outsides with olive oil. Grill sandwich on medium heat for 3 to 4 minutes per side until golden and cheese is melted.
Notes
Let the sandwich rest 1 minute before slicing.
Use sturdy bread to avoid sogginess.
