Description
Grilled tandoori chicken skewers marinated in yogurt and spices, then grilled to perfection. A bold, juicy dinner with Indian flavor.
Ingredients
1 cup Greek yogurt
2 tbsp lemon juice
1 tbsp olive oil
3 garlic cloves, grated
1 tbsp fresh ginger, grated
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp turmeric
1 tsp garam masala
1 tsp salt
1/2 tsp cayenne pepper
2 lbs boneless skinless chicken thighs, cubed
1 tbsp vegetable oil
1 red onion, cubed (optional)
1 bell pepper, cubed (optional)
Instructions
1. Mix all marinade ingredients in a large bowl.
2. Add chicken and toss to coat. Cover and refrigerate for 4 to 12 hours.
3. Preheat grill to medium-high (400°F).
4. Thread chicken (and vegetables if using) onto skewers.
5. Grill for 12–15 minutes, turning occasionally, until cooked through.
Notes
Use metal skewers or soak bamboo skewers for 30 minutes.
Marinate overnight for maximum flavor.
