Hawaiian Chicken Sheet Pan is an easy sweet and savory dinner made with juicy chicken, pineapple, and colorful vegetables roasted together in one pan. This tropical chicken sheet pan meal is perfect for busy weeknights and meal prep.
Ingredients
2 pounds boneless skinless chicken breast cut into chunks
2 cups fresh pineapple chunks
1 red bell pepper sliced
1 yellow bell pepper sliced
1 cup broccoli florets
1 small red onion sliced
3 tablespoons soy sauce
2 tablespoons honey
2 tablespoons olive oil
2 cloves garlic minced
1 teaspoon ground ginger
1 tablespoon cornstarch
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F and line a large sheet pan with parchment paper
2. In a bowl whisk together soy sauce honey olive oil garlic ginger and cornstarch to create the sauce
3. Place chicken pineapple bell peppers broccoli and onion on the sheet pan then pour the sauce over and toss to coat evenly
4. Spread everything into a single layer and bake for 25 to 30 minutes until the chicken is cooked and vegetables are tender with light caramelization
5. Remove from the oven let it rest for a few minutes then serve warm with rice or your favorite side
Notes
Do not overcrowd the pan so the chicken roasts properly
Cut ingredients evenly for consistent cooking
Fresh pineapple gives the best flavor but canned can work if drained well
Store leftovers in the fridge up to 4 days
Reheat gently with a splash of water to keep the chicken juicy
