Ingredients
3 cups cooked rotisserie chicken, shredded or diced
1 cup plain Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
½ cup celery, finely diced
¼ cup red onion, finely diced
½ teaspoon garlic powder
¾ teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh dill or parsley, chopped
Instructions
1. Shred or dice the rotisserie chicken into small even pieces.
2. In a large bowl combine Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper. Stir until smooth.
3. Fold in diced celery and red onion.
4. Add shredded chicken and gently mix until fully coated.
5. Stir in fresh herbs.
6. Refrigerate for at least 30 minutes before serving.
Notes
Use thick Greek yogurt for best texture.
Store in the refrigerator up to 4 days.
